🍮 *Rasmalai – Soft & Delicious Indian Sweet*
Rasmalai is a popular Indian dessert made with soft paneer balls soaked in sweet, creamy milk flavored with cardamom and saffron. It is rich, refreshing, and perfect for festivals or special occasions.
📝 *Ingredients*
*For Rasgulla Balls*
• 1 liter milk
• 2 tbsp lemon juice or vinegar
• 4 cups water
• 1 cup sugar
*For Rabri (Milk Syrup)*
• 500 ml milk
• 4 tbsp sugar
• ¼ tsp cardamom powder
• A few saffron strands
• 10–12 pistachios (chopped)
• 10–12 almonds (chopped)
👩🍳 *Method*
1️⃣ *Prepare the Paneer*
Heat milk in a pan. When it starts boiling, add lemon juice and stir until the milk curdles. Strain using a cloth and rinse with water to remove sourness. Squeeze out excess water.
2️⃣ *Make the Balls*
Knead the paneer for 8–10 minutes until smooth. Make small soft balls.
3️⃣ *Cook the Rasgullas*
Boil water and sugar in a pan to make syrup. Add the balls and cook for 12–15 minutes. They will double in size.
4️⃣ *Prepare the Rabri*
Boil milk in another pan and cook until it slightly thickens. Add sugar, saffron, and cardamom powder.
5️⃣ *Assemble the Rasmalai*
Squeeze the sugar syrup from the cooked balls and place them in the warm rabri. Garnish with chopped almonds and pistachios.
🌟 *Tips*
✔ Chill for 2–3 hours before serving for the best taste.
✔ Use full cream milk for richer rasmalai.
✔ Do not overcook the paneer balls or they may become hard.
