Gluten isn’t the real problem… bread is. I noticed this myself — even gluten-free bread spiked my sugar just like regular bread. Simple logic: Starch = glucose chains → fast sugar spike “Gluten-free” products often use rice flour, potato starch, tapioca → same spike, same problem Don’t get fooled by labels.
