Stuffed Masala Egg (Boiled Egg with Paste Filling)
Ingredients:
Shallots
Kanthari mulaku (bird’s eye chilli)
Ginger
Curry leaves
Coriander leaves
Salt
Eggs – 5
Method:
Boil the eggs well, remove the shells, and keep aside.
Finely grind shallots, kanthari mulaku, ginger, curry leaves, coriander leaves, and salt into a smooth paste (no water or very little).
Cut each boiled egg lengthwise into two equal halves.
Take one half of the egg and spread the prepared masala paste evenly on the cut side.
Cover it with the other half of the egg, gently pressing so the masala stays inside.
Repeat the same for all eggs.
