Vermicelli Banana Ada (Kerala Style)
Ingredients
Vermicelli (semiya)
Ripe banana (preferably Nendran banana)
Jaggery
Cardamom powder
Grated coconut
Ghee
Banana leaves
Preparation
Boil the vermicelli in water until soft.
Drain the water and keep it separate.
Cut the banana into small pieces.
Sauté the banana in a little ghee until soft and slightly caramelized.
Keep it separate.
Prepare jaggery syrup
Melt jaggery with a little water.
Strain if needed.
Add flavorings
Add cardamom powder and grated coconut to the jaggery syrup.
Mix the filling
Add the sautéed banana and boiled vermicelli into the jaggery mixture.
Mix well.
Prepare banana leaf packets
Place some mixture on a banana leaf.
Fold or twist the leaf to make a packet.
Steam or boil the packets until the ada is cooked and fragrant.
Open the leaf and serve warm. The banana leaf gives a beautiful aroma. 🌿
