Shape into donuts and fry until exterior is crispy . 2. MATHRI Ingredients 2 cups flour 1/4 cup ghee 1 tsp carom seeds 1 tsp black pepper Method Knead stiff dough with seeds . Fry small thick discs on low heat until very crunchy . 4. MIRCHI BAJJI Ingredients 6 large green chilies 1 cup gram flour 1/2 tsp tamarind 1 tsp salt Method Stuff chilies with tamarind paste . Coat in thick batter and deep fry until bubbling and hot . 5. NAMAK PARE Ingredients 2 cups flour 1/2 tsp salt 1 tsp cumin 1/4 cup oil Method Roll dough thin and cut into diamond strips . Deep fry until light brown and flaky . 6. SABUDANA VADA Ingredients 1 cup tapioca pearls 2 boiled potatoes 1/4 cup peanuts 2 chilies Method Mix soaked pearls with mashed potatoes and crushed peanuts . Form patties and deep fry until golden . 7. KACHORI Ingredients 2 cups flour 1/2 cup moong dal 1 tsp fennel 1/2 tsp asafoetida Method Stuff dough with spicy lentil paste . Deep fry slowly to achieve a flaky , hellow 8. BREAD PAKORA Ingredients 4 bread slices 1 cup potato mash 1 cup gram flour 1 tsp garam masala Method Sandwich potato mash between bread .
