🌟 Raj Kachori Recipe (राज कचौरी रेसिपी)
📝 Ingredients (सामग्री)
For Kachori (कचौरी के लिए)
1 cup सूजी (semolina / rava)
2 tbsp मैदा (all-purpose flour)
2 tbsp बेसन (gram flour)
1 pinch बेकिंग सोडा (baking soda)
नमक स्वादानुसार (salt to taste)
पानी (water, to knead dough)
तेल (oil for frying)
For Filling (भरावन के लिए)
½ कप उबले आलू (boiled potatoes, chopped)
½ कप उबले चने (boiled chickpeas)
½ कप उबले मूंग (boiled green gram sprouts)
½ कप दही (yogurt, whisked)
2 tbsp इमली की चटनी (tamarind chutney)
2 tbsp हरी चटनी (green chutney)
2 tbsp लाल चटनी (red chutney – optional)
2 tbsp सेव (sev / fine fried gram flour noodles)
1 tsp भुना जीरा पाउडर (roasted cumin powder)
1 tsp चाट मसाला (chaat masala)
½ tsp लाल मिर्च पाउडर (red chilli powder)
1 tbsp अनार के दाने (pomegranate seeds)
हरा धनिया (fresh coriander leaves, chopped)

🥣 Method (विधि)
Step 1 – Prepare Kachori (कचौरी तैयार करें)
1. Mix सूजी, मैदा, बेसन, नमक, और बेकिंग सोडा in a bowl.
2. Add water gradually and knead into a semi-soft dough.
3. Cover and rest for 20 minutes.
4. Make small balls, roll out, and deep fry on medium flame until golden & puffed.
Step 2 – Assemble Raj Kachori (राज कचौरी बनाएं)
1. Crack open the top of fried kachori.
2. Add boiled potatoes, boiled chana, and sprouts.
3. Pour whisked dahi generously.
4. Drizzle imli chutney, green chutney, and red chutney.
5. Sprinkle chaat masala, roasted cumin powder, red chilli powder, and salt.
6. Garnish with sev, coriander leaves, and pomegranate seeds.
Step 3 – Serve (परोसें)
Serve immediately while crispy with chilled yogurt and tangy chutneys.
