Ingredients
Beef
400 g shallots (small onion)
1 big onion (for final stage)
Ginger–garlic paste
Ginger–garlic (chopped separate)
Chopped green chilli
Curry leaves
Coconut oil
Turmeric powder
Chilli powder
Coriander powder
Pepper powder
Garam masala
Sliced coconut pieces
Salt
🍲 Step 1 – Pressure Cook the Beef
Wash and clean the beef properly.
Put beef in a pressure cooker.
Add:
Ginger–garlic paste
Chopped green chilli
Turmeric powder
Chilli powder
Coriander powder
Pepper powder
Garam masala
400 g shallots (whole or half cut)
Salt
Mix everything well.
No need to add much water (beef will release water).
Close cooker and cook for 5 whistles on medium flame.
Switch off and let pressure release naturally.
🍳 Step 2 – Make it Gravy Less
Transfer cooked beef into an uruli or thick kadai.
Cook on medium flame.
Let the water dry slowly.
Keep stirring in between.
It will slowly turn dark brown / black colour.
This stage gives the authentic Kerala black roast look.
🧅 Step 3 – Final Roasting
Add some coconut oil.
Add sliced onion and sauté until light brown.
Add chopped ginger–garlic.
Add curry leaves.
Add sliced coconut pieces and roast well.
Add little pepper powder.
Add little garam masala.
Adjust salt if needed.
Roast everything together till:
Oil separates
Beef becomes dark, slightly crispy
Coconut pieces become golden
