Ingredients:
Cooked rice – 1 cup (leftover rice is best)
Boiled potato – 1 medium (mashed)
Onion – 1 small (finely chopped)
Green chilli – 1 (finely chopped)
Ginger – 1 tsp (grated)
Carrot – 2 tbsp (grated)
Coriander leaves – 2 tbsp (chopped)
Red chilli powder – ½ tsp
Garam masala – ½ tsp
Salt – as needed
Corn flour or rice flour – 2 tbsp
Bread crumbs – for coating
Oil – for shallow frying
👩🍳 Method:
In a bowl, mash the cooked rice slightly.
Add mashed potato and mix well.
Add onion, green chilli, ginger, carrot, and coriander leaves.
Add chilli powder, garam masala, and salt.
Add corn flour and mix everything into a soft dough.
Take small portions and shape into round or oval cutlets.
Coat each cutlet with bread crumbs.
Heat oil in a pan.
Shallow fry on medium flame until golden brown on both sides.
Remove and place on tissue paper.
