½ cup jaggery
¼ tsp cardamom powder
1 tbsp ghee
1 tsp poppy seeds (optional)
Method
🔸 Motichur Laddu
1. Prepare Boondi Batter – Mix besan, food color, and water to make a smooth flowing batter.
2. Fry Boondi – Heat oil/ghee, pour batter through a slotted spoon to make tiny boondi, fry lightly, and strain.
3. Make Sugar Syrup – Heat sugar and water until one-string consistency, add cardamom.
4. Mix – Add fried boondi into syrup, mix well, and let it absorb.
5. Shape Laddus – Add chopped dry fruits, apply little ghee on palms, and shape into laddus.
🔸 Ukadiche Modak
1. Make Dough – Boil water with ghee and salt. Add rice flour, mix quickly, cover, and let it rest. Knead into soft dough while warm.
2. Prepare Filling – Heat ghee, add coconut, jaggery, cardamom, and poppy seeds. Cook until jaggery melts and mixture thickens.
3. Shape Modak – Take small dough balls, flatten, and make cup shapes. Fill with coconut-jaggery mixture, seal edges, and shape like modak.
4. Steam – Place modaks in a steamer, steam for 10–12 minutes until shiny and cooked.
