🥦 *Mix Veg Sabzi Recipe | Easy & Healthy Indian Veg Curry at Home* Craving a nutritious, colorful, and flavorful meal? This Mix Veg Sabzi is loaded with seasonal vegetables and Indian spices — perfect with roti, paratha, or rice. A wholesome dish for lunch or dinner! 🛒 *Ingredients* ➡️ 1/2 cup cauliflower (florets) ➡️ 1/2 cup carrots (chopped) ➡️ 1/2 cup green beans (chopped) ➡️ 1/2 cup green peas ➡️ 1 potato (peeled & diced) ➡️ 1 onion (finely chopped) ➡️ 1 tomato (chopped) ➡️ 1 green chili (slit) ➡️ 1 tsp ginger-garlic paste ➡️ 1/2 tsp turmeric powder ➡️ 1 tsp red chili powder ➡️ 1 tsp coriander powder ➡️ 1/2 tsp garam masala ➡️ Salt to taste ➡️ 2 tbsp oil ➡️ Fresh coriander (for garnish) ➡️ Water as needed 👩‍🍳 *Instructions* 1. Heat oil in a pan. Add chopped onions and sauté till golden brown. 2. Add ginger-garlic paste and green chili. Sauté for a minute. 3. Add chopped tomatoes and cook until soft. 4. Add turmeric, red chili powder, coriander powder, and salt. Mix well. 5. Add all vegetables and 1/2 cup water. Mix, cover, and cook on low flame for 10–12 minutes or until veggies are tender. 6. Add garam masala and cook for another 2 minutes. 7.
