🍛 *Vegetable Dum Biryani – Home Style Delight* 🍛
🛒 *Ingredients*
*For Cooking Rice*
➡️ Basmati rice – 1½ cups (soaked for 30 minutes)
➡️ Bay leaf – 1
➡️ Cloves – 2
➡️ Green cardamom – 2
➡️ Salt – as required
*_For Vegetable Gravy_*
➡️ Oil – 2 tbsp
➡️ Ghee – 1 tbsp
➡️ Onions – 3 large (thinly sliced)
➡️ Ginger-garlic paste – 1 tbsp
➡️ Tomatoes – 2 medium (finely chopped)
➡️ Mixed vegetables – 2 cups (carrot, beans, potato, peas, cauliflower)
➡️ Fresh curd – ½ cup (well whisked)
➡️ Red chilli powder – 1 tsp
➡️ Turmeric powder – ¼ tsp
➡️ Coriander powder – 1½ tsp
➡️ Garam masala – 1 tsp
➡️ Biryani masala – 1½ tsp
➡️ Salt – to taste
➡️ Mint leaves – ¼ cup (chopped)
➡️ Coriander leaves – ¼ cup (chopped)
*For Dum Layering*
➡️ Saffron strands – few (soaked in warm milk)
➡️ Fried onions – ¼ cup
➡️ Ghee – 1 tbsp
👩🍳 *Method*
*Step* 1️⃣: 🍚 Wash and soak basmati rice for 30 minutes. Boil with whole spices and salt until 70% cooked. Drain and keep aside.
*Step* 2️⃣: 🧈 Heat oil and ghee in a heavy pan. Add sliced onions and sauté until golden brown.
*Step* 3️⃣: 🧄 Add ginger-garlic paste and chopped tomatoes. Cook until soft and oil separates.
*Step* 4️⃣: 🥕 Add mixed vegetables, all dry spices, and salt. Cook on medium flame for 5 minutes.
*Step* 5️⃣: 🥣 Lower the flame, add whisked curd slowly, then mix in mint and coriander leaves.
*Step* 6️⃣: 🍛 Layer vegetable masala and rice alternately. Top with saffron milk, fried onions, and ghee.
*Step* 7️⃣: 🔥 Cover tightly and cook on low flame for 20–25 minutes (dum). Rest for 5 minutes and serve hot.
