🍲 *Dal Makhni – Restaurant Style Recipe*

📝 *Ingredients*
➡️ 1 cup whole urad dal (black gram)
➡️ 2 tbsp rajma (kidney beans) – optional but recommended
➡️ 1 medium onion (finely chopped)
➡️ 2 medium tomatoes (pureed)
➡️ 1 tbsp ginger-garlic paste
➡️ 2–3 green chillies (slit)
➡️ 1 tsp red chilli powder
➡️ ½ tsp turmeric
➡️ 1 tsp cumin seeds
➡️ 1 bay leaf
➡️ 2 tbsp fresh cream
➡️ 2 tbsp butter
➡️ 1 tbsp ghee (optional)
➡️ Salt to taste
➡️ Fresh coriander for garnish
🔥 *Steps*
*Step 1: Soak & Boil the Dal*
➡️ Wash urad dal and rajma.
➡️ Soak for 6–8 hours or overnight.
➡️ Pressure cook with salt and turmeric until soft (5–6 whistles).
*Step 2: Prepare the Masala*
➡️ Heat butter + ghee in a pan.
➡️ Add cumin seeds and bay leaf.
➡️ Add chopped onions and sauté until golden.
➡️ Add ginger-garlic paste and green chillies.
➡️ Add tomato puree and cook until oil separates.
➡️ Add red chilli powder and salt.
*Step 3: Combine Dal with Masala*
➡️ Add the boiled dal to the masala.
➡️ Mix well and mash slightly for a creamy texture.
➡️ Add 1 cup water (adjust consistency).
➡️ Let it simmer on low flame for 20 minutes.
*Step 4: Make it Creamy*
➡️ Add fresh cream and mix.
➡️ Add 1 tsp butter on top for that restaurant-style flavour.
➡️ Simmer for 5 more minutes.
🌿 *Garnish & Serve*
Garnish with cream and coriander leaves.
Serve hot with naan, roti, or jeera rice.
