*Adhirasam* Recipe prepared using *JB Jaggery*
Ingredients:
Raw rice - 1 cup
JB Jaggery - ¾ to 1 cup
Cardamom powder - ¼ tsp
Dry ginger powder - a pinch (optional)
Water - little
Oil - for frying
Preparation Method:
Step 1 - Prepare rice flour
Wash and soak raw rice for 2 hours.
* Drain water completely.
* Dry slightly on a cloth for 10 to 15 minutes.
* Grind into slightly moist fine flour.
* Sieve and keep aside.
Step 2 - Prepare jaggery syrup
* Add jaggery with little water in a pan.
* Heat until jaggery melts.
* Boil until soft-ball consistency.
To check:
Drop little syrup in water.
If you can gather it softly with fingers, consistency is ready.
Step 3 - Make dough
* Switch off flame.
* Add cardamom powder and dry ginger powder.
* Slowly add rice flour and mix well.
* Dough should be soft, slightly sticky.
Step 4 - Rest the dough
Keep covered for at least 6 to 8 hours or overnight.
This helps get soft Adhirasam.
Step 5 - Fry
* Grease banana leaf or oil sheet.
* Take small lemon-sized dough.
* Flatten gently with fingers.
* Fry in medium hot oil.
* Once it rises, flip and cook both sides.
* Press gently between two ladles to remove excess oil.
Tips
* Oil should not be too hot.
* Dough resting is important for softness.
* Fresh homemade rice flour gives best texture.
