Banana Sweet Pancake using JB Nattusakkarai
Ingredients:
2 ripe Banana
1 cup wheat flour
¼ to ½ cup JB Nattusakkarai
2-3 tbsp grated coconut
A pinch of cardamom powder
A pinch of salt
Milk or water as needed
Ghee or oil for cooking
Method
* Mash the ripe bananas well in a bowl.
* Add Nattusakkarai and mix until combined.
* Add wheat flour, grated coconut, cardamom powder, and a pinch of salt.
* Pour milk or water little by little and make a smooth batter similar to pancake or dosa batter consistency.
* Let the batter rest for 10 minutes.
* Heat a tawa or pan and pour small ladles of batter to form pancakes.
* Drizzle a little ghee or oil around the edges.
* Cook on both sides until golden brown.
Tips
Make mini pancakes for kids.
Adding coconut gives a soft texture and delicious flavor.
Serve hot with a little ghee or honey.
