🛒 *Ingredients:*
➤ 1 cup cauliflower florets 🥦
➤ ½ cup green peas 🫛
➤ 1 carrot (chopped) 🥕
➤ ½ cup French beans (chopped) 🫛
➤ 1 potato (cubed) 🥔
➤ 2 onions (finely chopped) 🧅
➤ 2 tomatoes (pureed) 🍅
➤ 1 tbsp ginger-garlic paste 🧄
➤ 2 tbsp grated fresh coconut 🥥
➤ 2 tbsp roasted peanuts 🥜
➤ 2 tbsp oil 🧈
➤ ½ tsp turmeric powder 🌼
➤ 1 tsp red chilli powder 🌶️
➤ 1 tsp coriander powder 🌿
➤ ½ tsp garam masala ✨
➤ Salt to taste 🧂
➤ Fresh coriander (chopped) 🌿
👩🍳 *Method:*
1️⃣ Boil or steam the cauliflower, carrots, French beans, potatoes, and green peas until just tender. Drain and keep aside. 🥦🥔🥕
2️⃣ Heat oil in a pan. Sauté the onions until golden, then add the ginger-garlic paste and cook for a minute. 🧅🧄
3️⃣ Add the tomato puree, turmeric, red chilli powder, coriander powder, and salt. Cook until the masala thickens and the oil separates. 🍅
4️⃣ Blend the grated coconut and roasted peanuts into a smooth paste. Add it to the masala and cook for 3–4 minutes. 🥥🥜
5️⃣ Add the boiled vegetables and mix well. Pour in a little water and simmer for 8–10 minutes. 🍛
6️⃣ Sprinkle garam masala and garnish with fresh coriander leaves. 🌿✨
7️⃣ Serve hot with naan, roti, paratha, bhakri, or jeera rice. 😍🍽️
